Last night I planned on making the recipe for chicken enchiladas that Kate M. recently posted on her blog. But I ended up getting home late and didn't have time to stop at the store for all of the ingredients. So, since I had only 2 chicken breasts, I rinsed a can of black beans and put those in. And since I didn't have the canned milk, I used some of the liquid from poaching the chicken. And since I didn't have the canned green chilies, I put in two chopped jalapeƱos. (We have dozens of jalapeƱos frozen because a friend from church grows them and knows that Ryan likes them.) This part didn't work as well. Hot, hot, hot. But, once I started pushing the peppers aside on my plate, it was really good. So, I endorse her recipe as pretty darn good since you can fiddle with it, and it still tastes yummy. Has anyone else tried something that has worked well recently?
It is starting to get cold here. It's supposed to freeze Wednesday night! Fall has to be my favorite time of year. I need to remember how good these first chilly days feel in February when it is dark and depressing. My favorite thing about fall in Indiana is the gorgeous colors on the trees. I'm happy to say that now that verse about there being a time for everything under heaven makes more sense to me than it used to. Fall is the time for being thankful that I can go for my morning walk without breaking a sweat and that soup tastes just right and that people are beginning to look forward to the holidays. Much different than growing up on the coast where October only means that the high is 85 instead of 95. What are your favorite things about fall? I also want to hear about everyone's plans for homecoming. I look forward to living vicariously through you. :) Have a good day!

I love everything about Fall! The cooler temperatures, the leaves, the clothes. It didn't get out of the 50s here yesterday.
It looks like Homecoming is going to be cool as well. I wish you could come. Jaime and I are driving in Friday afternoon.

Fun weekend with friends, and I am jealous of your cool weather... we are supposed to have some cooler weather this weekend, but it has been in the nineties otherwise! We are leaving early to make it to Abilene for the carnival friday afternoon. But then we are coming back saturday night because clint and I are both teaching Bible class at our church. We will miss you!! Maybe we can do lunch somewhere when you are in the TX area. I can come pick you up. Although I am usually accompanied by a pack of little boys!
A Jamie/Jaime road trip sounds like a load of fun. I hope that you girls had a great time, and I expect that you did.

Fall is my favorite too!! Oh, how I love Fall! I miss it in Germany - it is so stinking wonderful! Down here we have 4 seasons too - Summer, Almost Winter, Somewhat Winter, Amost Summer. Not quite the same, you know? Our trees change color for a day and then it freezes and they fall off! I am glad you get a good Fall though!
I am just kind of catching up on old blogs, but I am glad you liked the recipe. The recipe I posted is actually a little doctored, too. I think I am going to take Jackson to the arch over Christmas as we will be in St. Louis to visit my extended family. It looks like it was a beautiful day for you to be out and about in MO!
Ok, no fair that you got to go to St Louis when it was actually pretty! I was there in January, and it looks like a totally different place. No wonder they gave us the off-season discount to go up the Arch! Because the view was "off-season!)
